The History of Making Monda
The inventor of Gopal Pal was born in 1206 in India’s Murshidabad. After the death of Nabab Siraj-Ud-Doula, he came to Rajshahi. After that, he came to Muktagacha in the year 1230. The first monda was made in 1231.
There is an interesting story found about the discovery of the monda. About two hundred years ago, Gopal Pal dreamed one night that a sage was standing near his head and ordering him to make monda sweets. The next morning, after waking up, Gopal started digging the stove under the orders of the sage. Suddenly the sage emerged. He wiped his hand on the stove and taught Gopal the secret method of making monda. The famous monda was made with milk, sugar, and other ingredients.
Gopal served this new dessert at the royal palace of Maharaja Suryakanta Acharya Chowdhury, the landlord of the then Muktagacha. The Maharaja was amazed and astonished to taste the monda and did much praise of Gopal Pal. Thus began the journey to the delicious sweets, monda.
The Technique of Preparing Monda
Generally, the main ingredients for making monda are pure milk, curd, and sugar. At present 1kg of monda is sold at 400 takas. However, after making monda, it does not have to be stored in the fridge. Manda stays good for 3 to 5 days in hot weather and 10 to 12 days in winter at normal temperatures.
At first, the milk is condensed to make curds. Then the sugar is mixed with the milk. A large mold is made by rounding the lamb in a soft hand. The mold is then flattened by throwing it by hand on a cloth lying on a clean hard surface. After it cools it hardens and is then removed from the cloth. So the lower part of the mold is straight, and the other side is a little bit higher. The corners are a bit cracked. The colors of the mounds are white or brown depending on the color of the curd. monda was usually sold wrapped in paper, but nowadays it is sold in sweet’s packets.
